Ceasar Clans Chicken
Sausage and Tasso Gumbo

quarts Water

heaping tblsp. Dark
Roux

Large Hen ( cut up
and seasoned)
well

lbs. Smoked Sausage
or Andouille
12
oz. Smoked Tasso,
thin sliced
1
large Onion, chopped
small
1
Bell Pepper chopped
large
3
cloves Garlic, minced(a
bulb of garlic is
the whole thing a
clove is just a
piece. Thanks
Gwindolyn).

stalks Celery
chopped
1/2
cup Green Onion,
chopped small
1/2
cup Parsley, chopped small
1 Jalapeno
1
package dried Shrimp
Dissolve
Roux in water in medium
heat and let boil for a
half hour add chicken,
Tasso, sausage
and
vegetables, bring to boi l lower heat to
medium and cook until
Chicken and vegetables
are tender. (about one and a half hours) at the
hour mark taste for
seasoning you may want
it more spicy don't be
afraid to add.Served
over cooked rice in soup
